That’s why we started from the most solid base our family has ever known: the legendary Nonna Jole.

It is from her cookery books that we started to study, with a team of experienced and selected pastry chefs, a range of products that are suitable for today’s world.

CERTIFICATION

The IFS Food (International Food Standard) certification is, among food certifications, the one that allows us to carefully select and verify our suppliers. This allows our high-quality pastries and bakery products to exceed the strictest European standards required by the large-scale retail distribution and the Horeca channel.

Our company has been awarded the IFS Food Higher Level standard, a superior level status that recognises the company’s excellent management system. This system undergoes two types of audits: the first, which verifies its implementation, and the second, which focuses on control.

The conclusive audit is conducted by an external consulting company, CSQA in our case, which has the authority to certify the company’s conformity to the IFS Food standard. The advantages of this certification are numerous, including:

  • Greater awareness of food safety and product quality by all workers.
  • Full control of working environments, products, processes and personnel to operate according to the HACCP methodology.
  • Optimisation of the resources used in the different processes.
  • Mapping of all company processes to optimise them and increase efficiency.
  • Fewer non-conformities and lower costs.
  • Clear evaluation methodology on supplier performance.
  • Improvement of company branding.

The UTZ Cocoa Certification establishes standards for sustainable agriculture. This certification ensures that the production and origin of cocoa is monitored, providing a clear traceability of the origin of the raw material.

This guarantees that the cocoa is a sustainable product whose processing takes ethical and environmental aspects into account.

The UTZ certification programme is part of something much bigger and with ambitious goals: the Rainforest Alliance.

It aims to create a better future for both nature and people. At Il Dolce Forno, it is important that all requirements of the UTZ Cacao certification are met along the entire supply chain in order to assure the company and its customers:
The traceability of products;
The application of correct agricultural practices ensuring product safety, quality and legality;

  • The promotion of a sustainable working environment by avoiding environmental and socio-labour exploitation;
  • Certification through recognised international standards;
  • The rapidity of product qualification processes;
  • Inclusion in an international register in which all companies certified according to this standard are listed.
  • The origin of the raw material, production, processing, transport and distribution;
  • The sustainability of prices and costs throughout the supply chain;
  • Better market visibility for the company

Il Dolce Forno has obtained FDA (Food and Drug Administration) authorisation and certification to export its products to the United States.

Over time, the North American market has become an increasingly important channel for the company, with increased demand for our baked goods.

Thanks to continuous investment in research, product development and new production technologies, Il Dolce Forno is able to face international markets and rapidly evolving trends in the food industry.
